What is Jakhiya?
Jakhiya (Cleome viscosa) is a tiny wild seed native to the Himalayan region, particularly Uttarakhand.
At first glance, it looks unassuming—small, dark brown seeds that resemble coarse mustard. But something magical happens the moment they meet hot oil.
They begin to dance.
The seeds crackle gently, releasing a warm, nutty aroma with subtle earthy notes that instantly transforms the dish.
Unlike many spices that dominate the food, Jakhiya enhances it. It adds texture, aroma, and a uniquely Himalayan character without overpowering the natural flavours.
Why is it special?
For centuries, Jakhiya has been an essential part of traditional Garhwali and Kumaoni cooking.
It isn't grown on massive industrial farms.
Much of it is still collected or cultivated in the Himalayan foothills, making it a truly regional ingredient that remains relatively unknown outside Uttarakhand.

How do you use it?
Using Jakhiya couldn't be easier.
- Heat 1–2 teaspoons of oil or ghee.
- Add half a teaspoon of Jakhiya.
- Let the seeds crackle for 10–15 seconds.
- Add your vegetables, lentils or potatoes.
That's it.
The tempering infuses the entire dish with its distinctive flavour.
