Bhatt Ki Churkani: The Soul-Warming Curry of Uttarakhand

Bhatt Ki Churkani: The Soul-Warming Curry of Uttarakhand

Bhatt Ki Churkani: Uttarakhand's Rustic Black Soybean Curry

If the Himalayas had a comfort food, Bhatt Ki Churkani would be a strong contender.

A cherished dish from the Kumaon region of Uttarakhand, Churkani is made using Bhatt—an indigenous black soybean that has nourished mountain communities for centuries. Slow-cooked with roasted wheat flour, garlic, spices, and a generous amount of patience, it transforms simple ingredients into a rich and deeply satisfying meal.

This is not a heavily spiced restaurant-style curry. Instead, it celebrates the natural flavour of its ingredients, creating a dish that is earthy, nutty, wholesome, and incredibly comforting.

What Does Bhatt Ki Churkani Taste Like?

The first thing you'll notice is its aroma.

Roasted Bhatt releases a warm, nutty fragrance, while the slow-roasted wheat flour adds depth and richness to the curry. The texture is silky and velvety, somewhere between a hearty soup and a traditional Indian curry.

The flavour is earthy and savoury with gentle spice, allowing the black soybeans to take centre stage. Every spoonful feels nourishing, warming, and surprisingly complex despite the simplicity of the ingredients.

Think of it as the Himalayan answer to a slow-cooked bean stew—humble, hearty, and deeply satisfying.

Traditional Bhatt Ki Churkani Recipe

Serves: 4–5

Ingredients

  • 1 cup Bhatt (black soybeans)

  • 2 tbsp whole wheat flour (atta)

  • 2 tbsp mustard oil or ghee

  • 1 tsp cumin seeds

  • A pinch of hing (asafoetida)

  • 5–6 garlic cloves, crushed

  • 2 green chillies, finely chopped

  • ½ tsp turmeric powder

  • 1 tsp coriander powder

  • Salt to taste

  • 4–5 cups water

  • Fresh coriander leaves for garnish

Method

Step 1: Roast the Bhatt

Heat an iron kadhai or heavy pan and dry roast the Bhatt over a medium flame for 5–7 minutes.

As the beans roast, they will begin to release a distinctive nutty aroma. This step deepens the flavour and gives Churkani its characteristic taste.

Allow them to cool slightly.

Step 2: Cook the Bhatt

Wash the roasted Bhatt thoroughly and pressure cook them with water until soft.

Depending on the age of the beans, this may take 6–8 whistles or around 25–30 minutes in a pressure cooker.

Reserve both the cooked Bhatt and the cooking liquid.

Step 3: Prepare the Churkani Base

Heat mustard oil or ghee in a kadhai.

Add cumin seeds and hing.

Once fragrant, add crushed garlic and green chillies and sauté until lightly golden.

Now add the wheat flour.

Roast the flour patiently on a low flame for 4–5 minutes, stirring continuously until it develops a golden colour and a rich roasted aroma.

This roasted flour is what gives Churkani its signature body and flavour.

Step 4: Build the Curry

Add turmeric and coriander powder.

Immediately add a splash of water and stir well.

Slowly pour in the reserved cooking liquid while continuously stirring to prevent lumps from forming.

Add the cooked Bhatt and salt.

Step 5: Simmer Slowly

Allow the curry to simmer gently for 15–20 minutes.

The roasted flour will gradually thicken the liquid into a smooth, velvety gravy while the flavours meld together beautifully.

If required, add a little extra water to adjust the consistency.

Step 6: Serve

Garnish with freshly chopped coriander.

Serve hot with steamed rice and a spoonful of desi ghee.

Why Bhatt Has Been Valued for Generations

Mountain communities have long prized Bhatt for its nutritional value.

  • Rich in plant-based protein

  • High in dietary fibre

  • Naturally satisfying and energy-dense

  • Packed with essential minerals

  • Traditionally considered a warming food during colder months

Combined with the slow-cooked gravy of Churkani, it becomes a meal that is both nourishing and deeply comforting.
